This “cheese” is almost better than the real thing. It is delicious spread on crackers or rolled up in sliced ham for a quick a lunch.
This spread is created from cashews that have been soaked in water overnight to make them soft. Whirred in the Vitamix or blender to create a puree with some seasoning, it is fast and easy to whip up. Cashews are a healthy addition to any diet. Just 1/4 cup of cashews offers 7 grams of protein, 116 mg of magnesium plus zinc, copper, manganese, phosphorus, and calcium.
2 c. raw cashews soaked in water overnight and drained
1/2 lemon, juiced
1 clove of garlic, grated
2 T. nutritional yeast
2 T. extra virgin olive oil
2 T. apple cider vinegar
1 T. sea salt
2-4 T. water to help blender blades move
Place everything into a high-powered blender or Vitamix. Begin on low speed and gradually increase to medium speed using a spatula to keep the mixture moving and the cashews touching the blades. Add a little more water if blades have a hard time catching. The spread is finished when smooth and cashews bits are gone. Use a small spatula to move into a glass jar with a lid. Can be kept in refrigerator for about 2 weeks.
