I was skeptical the first time I tried out another blogger’s recipe for vegan banana ice cream. I thought, “bananas that turn into ice cream, yeah right”. Boy, was I wrong! Just by processing frozen bananas in a food processor until smooth. It creates a healthy, delicious dessert that resembles soft serve ice cream. Some other recipes call for the addition of coconut milk or avocado, but I found the consistency is best with just banana. Perfecting the recipe to make it the best version of itself, I added vanilla, maple syrup, and cinnamon. This takes the flavor up a notch, without effecting consistency.
3 bananas, peeled, cut into chunks and frozen
1 T. maple syrup
1/2 tsp. cinnamon
dash of sea salt
Place everything in a food processor and turn power to high. Before the bananas really get going and breakdown, you will probably have to turn off the processor and scrap down the sides multiple times. Usually 5-7 times before the blades can really catch and begin to smooth out the banana. Once the bananas are look creamy with no lumps, leave the motor running another 30 seconds to ensure a really creamy consistency.
Scoop into 2 bowls and top with toasted coconut chips or chopped nuts.
