Ah, sausage. Most store-bought versions contain black pepper plus “spices”, so they are off-limits during the strict elimination phase of AIP. Creating convenience foods while on AIP is a huge help and ensures compliance for the elimination phase duration that calms inflammation and re-sets the immune system. Here is one of the convenience foods that I came up with.
1 lb. ground pork
1/2 apple, diced small
1 T. onion, minced
1 T. maple syrup
1 tsp. ground sage
1/2 tsp. garlic granules
1 tsp. sea salt
1 T. arrowroot flour
Combine ingredients in a bowl using hands to work the spices evenly throughout the meat. Create 8 patties that are 2 oz each. Place on parchment lined baking sheet and bake at 350 F for 10 minutes.
To serve, toast in a toaster oven until browned and warmed through. Goes well with chimichurri or AIP bbq sauce.
