Easy Cilantro Chimichurri (AIP)

This is the easiest sauce to make, adds a ton of flavor to food, and goes well with many things. It tastes great on beef, lamb, pork, turkey, salmon, and shrimp. Also, on roasted cauliflower, broccoli, and carrots or as a condiment for tacos and a dipping sauce for meatballs.

1 bunch of organic cilantro

6 T. extra virgin olive oil

2 T. apple cider vinegar

1 garlic clove, grated

1/2 tsp. sea salt

Grab the bunch of cilantro and tear the woody stems off, place the top portion in a Vitamix. Add all other ingredients and puree until almost smooth scrapping the sides of Vitamix occasionally.
