Grounding, warm, filling. This smash is just that. Pairs well with most meat dishes. Top with sauerkraut for another layer of flavor.
1 small rutabaga, peeled
1 yam or sweet potato
1-2 parsnips
2-4 carrots
1 large clove garlic, grated
1/4 c. reserved bacon fat or lard
1/4 tsp. thyme
sea salt
Prepare vegetables by cubing them into similar size pieces. Place in a large sauce pan and cover with water. Add 1 tsp. sea salt. Bring to a boil and let cook for 10-15 minutes until all vegetables are soft. Gently pierce with a knife, to determine doneness, but these should be on the softer side because you will be mashing with a potato masher by hand.
Drain. Add thyme, 1/2 tsp sea salt, garlic, and bacon fat to the same sauce pan. Return drained vegetables to saucepan. Using a potato masher, mash away until you like the consistency.
